We are an innovative seafood company based in Tromsø, producing bottarga from cod roe. Our bottarga is produced in the arctic winter, when the Atlantic cod comes to spawn around the Lofoten islands. We hand pick and salt the best quality roes, and dry them outside in the cool and clean northern Norwegian climate. The bottarga is allowed to dry and mature for two months before it is ready to be enjoyed.
